Thai Ginger Salmon

A simple and delicious five ingredient recipe. Perfect for a quick mid-week dinner, yet special enough for guests. Give it a try and let us know what you think in the comments. 

  • 1 Sockeye salmon fillet
  • 6 T Thai sweet chili sauce
  • 3 T soy sauce or tamari
  • 1 T finely grated ginger
  • 2 T chopped chives for garnish

 

In small glass bowl whisk together chili sauce, soy sauce & ginger. Place sockeye fillet skin-side-down into a 9x13 in. glass baking dish. Pour marinade over the salmon. Marinate for about 30 minutes in the fridge. Heat oven to 250 F. Place salmon onto the center rack of the oven and roast for 20 minutes.

Serve with your favorite sides. We chose white sticky rice and shelled edamame. Enjoy!
