Simple Sockeye Salad
In celebration of National Heart Health month, we put together this simple recipe that is packed full of heart-healthy ingredients, including organic beets, omega-3 rich sockeye salmon, and walnuts. Perfect for using up leftover salmon, this superfood salad makes a nutritious lunch or easy weeknight dinner!
Ingredients:Β
- 4 cups organic mixed greens
- Roasted sockeye (leftovers work great!)Β
- 1/2 cup cooked beets, cubed
- 1/4 cup walnuts, chopped
- 2 Tbsp. feta cheese, crumbled
- Apple cider vinaigrette to taste (see recipe below)Β
Directions:
Toss the organic mixed greens with roasted sockeye salmon, beets, walnuts, feta, and apple cider vinaigretteβvoilΓ ! A heart-healthy and delicious meal in minutes.
Apple Cider Vinaigrette Recipe:
- 1/2 cup olive oil
- 1/4 cup apple cider vinegarΒ
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/2 tsp. Dijon mustardΒ
Directions:
Combine all ingredients in a glass jar with a lid and shake well.
(Serves 4 as a starter salad or 2 as a main course)Β
