Simple Sockeye Salad

In celebration of National Heart Health month, we put together this simple recipe that is packed full of heart-healthy ingredients, including organic beets, omega-3 rich sockeye salmon, and walnuts. Perfect for using up leftover salmon, this superfood salad makes a nutritious lunch or easy weeknight dinner!

Ingredients: 

  • 4 cups organic mixed greens
  • Roasted sockeye (leftovers work great!) 
  • 1/2 cup cooked beets, cubed
  • 1/4 cup walnuts, chopped
  • 2 Tbsp. feta cheese, crumbled
  • Apple cider vinaigrette to taste (see recipe below) 

Directions:

Toss the organic mixed greens with roasted sockeye salmon, beets, walnuts, feta, and apple cider vinaigrette—voilà! A heart-healthy and delicious meal in minutes.

Apple Cider Vinaigrette Recipe:

  • 1/2 cup olive oil
  • 1/4 cup apple cider vinegar 
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 tsp. Dijon mustard 

Directions:

Combine all ingredients in a glass jar with a lid and shake well.

(Serves 4 as a starter salad or 2 as a main course) 

Hot tip: We found organic, pre-cooked beets in the refrigerated section at Costco!
