Easy Halibut Tacos

PREP TIME: 15 MIN COOK TIME: 10 MIN  SERVES: 4

Ingredients:

4 halibut portions

1 tsp. chili powder

1 tsp. cumin

1/2 tsp. smoked paprika

1/2 tsp. garlic powder

1/2 tsp. Kosher salt

1/2 tsp. black pepper

8 corn tortillas

1 Tbsp. olive oil


Spicy Mayo:

1/4 c. plain Greek yogurt

1/4 c. mayonnaise

1 tsp. siracha

1/2 tsp. garlic powder


Toppings:

Cabbage or mixed greens, chopped

Fresh cilantro, chopped

1/2 avocado, diced

2 Tbsp. Pico de gallo


Directions:

Rinse the halibut portions and pat dry. Sprinkle the fish with chili powder, cumin, smoked paprika, garlic powder, kosher salt, and black pepper. Heat olive oil in large skillet over medium-high heat. Add the halibut portions and cook 3-4 min per side. Let the halibut rest for 5 minutes. While the fish rests, warm the tortillas and make the spicy mayo. Assemble the tacos with halibut, the toppings, and a drizzle of the spicy mayo. Enjoy!
