Pan Seared Salmon with Lemon and Herb Butter

Ingredients: 

  • 1 Sockeye fillet or 3 portions 
  • 2 Tbsp. olive oil
  • 1/2 tsp. salt
  • 1/4 tsp. pepper 
  • 1/2 cup butter, room temperature
  • 1 Tbsp. dill
  • 1 Tbsp. parsley
  •  Juice of 1 lemon
  • 1 large clove garlic, minced
  • Optional: cooked orzo seasoned with salt and chopped parsley 

Directions: 

Rinse and pat the salmon dry, and season with salt and pepper. Mix together the butter, parsley, dill, garlic, and juice from 1/2 lemon in a bowl until combined and set aside. Heat a cast iron skillet over medium-high heat and add 2 Tbsp. of olive oil. Once the olive oil shimmers, add the salmon to the pan skin-side-down. Drizzle the juice of 1/2 lemon over the salmon and cook for about 3 minutes. Flip the salmon, then cook for another 2 minutes or until it is done. Once the salmon has finished cooking, remove it from the pan and spoon the butter evenly over the cooked salmon. Serve with orzo, salad, or your favorite side and enjoy!
