Zesty Lemon Mediterranean Halibut
Halibut Ingredients:
- 6 Halibut portions
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- ½ teaspoon red pepper flakes (optional if you are sensitive to spice)
- Salt & ground black pepper to taste
- 1 zucchini, sliced
- 1 red onion, thinly sliced
- 1 cup cherry or grape tomatoes, halved
- ½ cup pitted kalamata olives
- 1 small lemon, thinly sliced
Lemon Sauce Ingredients:
- 3 tablespoons olive oil
- Juice of 1 lemon
- ½ teaspoon Dijon mustard
- ½ teaspoon honey
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- In a small bowl, whisk together all ingredients and set aside.
Directions:
Preheat oven to 400°F. Drizzle olive oil in a glass or ceramic baking dish. Add the zucchini, red onion, cherry tomatoes, and olives to the dish in an even layer. Rinse the halibut portions and pat dry. Season fish with olive oil, salt & pepper, garlic, oregano, paprika, & red pepper flakes. Place the halibut among the vegetables and top each portion with a lemon slice. Drizzle the lemon sauce over the halibut & vegetables. Bake uncovered for 15-18 minutes, being careful not to overcook. Serve with cooked rice or a fresh green salad and enjoy!
