Grilled Salmon Skewers
Ingredients:Â
- 1 Sockeye Fillet or 3 Portions
- 1 Large ZucchiniÂ
- 1/2 Red Onion
- 8 oz. Cherry TomatoesÂ
- 2 Tbsp. Olive Oil
- 1 tsp. saltÂ
- 1/2 tsp. ground pepperÂ
- SkewersÂ
Directions:Â
Remove the skin from the salmon fillet. Cut the salmon, zucchini, and red onion into bite-sized pieces. Season the salmon, zucchini, red onion, and cherry tomatoes with olive oil, salt, and pepper. Then, arrange onto the skewers. Grill on medium-high heat for 3 minutes, flip the skewers, then grill for another 2 minutes. Serve with your favorite sides and enjoy!Â
