Grilled Salmon Skewers

Ingredients:Β 

  • 1 Sockeye FilletΒ or 3 Portions
  • 1 Large ZucchiniΒ 
  • 1/2 Red Onion
  • 8 oz. Cherry TomatoesΒ 
  • 2 Tbsp. Olive Oil
  • 1 tsp. saltΒ 
  • 1/2 tsp. ground pepperΒ 
  • SkewersΒ 

Directions:Β 

Remove the skin from the salmon fillet. Cut the salmon, zucchini, and red onion into bite-sized pieces. Season the salmon, zucchini, red onion, and cherry tomatoes with olive oil, salt, and pepper. Then, arrange onto the skewers. Grill on medium-high heat for 3 minutes, flip the skewers, then grill for another 2 minutes. Serve with your favorite sides and enjoy!Β
